πŸ€— Mid-February Meals That Feel Like a Hug

Happy (Late) Valentine's Day, Sweet Friends!

If you've known me for any length of time, you might know that Valentine's Day is my *favorite* holiday. Christmas? I'm a total Scrooge. Thanksgiving? I do most of the work, so it's fine. Valentine's Day? Yes, please, and thank you.

I think it started because, as a kid, it was a crafty thing in the classroom. Decorating our mailboxes, cutting and stapling paper chains together, pink and pink?? All the *cute* charming things I love to fill my life with.

But, also a full day, dedicated to telling the people in your life how much you adore them?! Again, yes!! ((By the way: that's YOU! I sure do adore you, dear ones!))

Valentine's Day is nestled in the chilly winter, bringing us a little lively hope while we wait.

By now, winter feels long β€” and that’s exactly why we lean into comfort.

This week’s meals are warm, grounding, and deeply satisfying without being complicated.

🍽️ This Week’s Cozy Picks

Main Dish Options

  • 🍲 Creamed Chipped Beef on Toast β€” A nostalgic recipe that is incredibly comforting. Did y'all have this?!
  • πŸ₯© Smashed Meatball Subs β€” If you have meatballs in your freezer, this meal comes together quickly!
  • πŸ§€ Sweetpea's Macaroni and Cheese β€” this recipe is super easy, but OH SO creamy! (And I know this is more of a side dish, but it's very heavy, so it could be served with a light salad for a great meal.)
  • πŸ— Butternaise Roasted Chicken β€” if you haven't mixed mayonnaise with softened butter and slathered it on your chicken before roasting, you're missing out.

Easy Sides

  • πŸ₯” Steakhouse Potatoes Romanov β€” One of my all time favorite side dishes to make, especially for a dinner party! You can make it ahead of time, and everyone loves it.
  • πŸ§€ Low Carb Cheesy Cauliflower Casserole β€” If you're needing a cheesy, warm side dish without a lot of carbs, this is it.
  • πŸ₯— Mandarin Orange Slaw-lad β€” I used the salad of my childhood and added some cole slaw mix to it, and it's super crunchy! Delish.

🀍 Hosting Hope

In a culture that rewards spectacle, choosing ordinary hospitality is quietly radical. A weeknight meal. Soup and bread. Candles lit anyway. These small, repeated acts of care build trust β€” and trust is what carries us through dark seasons.

This is food that invites people to linger.
Even if the only person lingering is you.

And that still counts. πŸ’—

Let me say this clearly: Hosting doesn’t start with six people. It starts the moment you decide to make space. A dinner for two β€” or even one β€” still deserves: a candle a real plate a moment of pause One thing I've set out to do this year is "host" myself. I never set a table for me -- I'll wait until I'm having other people over to use my table. But why wouldn't I host myself first?! I'm worth it...
